Preserving culinary diversity, artisanal food businesses, and promoting sustainable lifestyles

Slow Food Deutschland

Slow Food’s objectives include the preservation of regional culinary diversity, traditional production methods and the revitalization of artisanal food businesses. Its flagship project is the Ark of Taste, a global catalog of food products at risk of disappearing from the world’s markets.

The circulation and articulation of the movement’s defining narratives are vital to its reach as a powerful political voice.

It is a movement

The Slow Food movement is a subculture that promotes a more respectful treatment of nature and the environment. It also encourages the consumption of traditional regional foods, often grown organically. It has 83,000 members in 50 countries, organised into 800 local convivia. Its philosophy democratises culture and elevates traditional wisdom to the level of scientific knowledge.

The movement advocates a more sustainable lifestyle through its three fundamental tenets: whole foods, clean production methods that preserve the environment, and fair prices for both consumers and producers. It also works to protect agrobiodiversity by maintaining a “Ark of Taste” that travels the globe seeking out traditional and culturally-significant foods.

The movement’s internal diversity can cause tensions, especially when different ‘faces’ of the movement conflict with one another. For example, elitist settings in North America and Western Europe give rise to high-brow eating clubs while ‘radical’ settings in Latin American and Africa raise concerns about land grabbing by multinational corporations.

It is a network

Slow Food is a global network of people committed to good, clean and fair food for all. The movement campaigns worldwide for this goal by educating, inspiring and mobilizing its members. It also promotes a world in which biodiversity and cultural heritage are preserved and enjoyed.

This paper presents the results of a research project that uses a network approach to analyze the evolution of Slow Food. The focus on encounter, coding and signification illuminates the twists and turns that affect a movement’s political orientation and clout. It shows, for example, how a core Slow Food activity and symbol, ‘School Gardens’, met resistance, changes and alterations at the grassroots level.

In addition, the research sheds light on the emergence of a local-global communication and interaction pattern that goes well beyond the traditional domain of social movements. It also explores how semiotic practices acquire coherence and become ‘one’ through the day-to-day concretisation in local spaces of circulating ideas, concepts and codes.

It is a culture

The Slow Food movement advocates for a food culture that celebrates healthy and traditional foods. It also promotes a sustainable food economy and fair remuneration for farmers. Its members are concerned about the loss of biodiversity, and believe that good food should be accessible to all. It also encourages the development of new products that preserve local cuisine and traditions.

The global network of Slow Food campaigns worldwide for food that is good, clean and fair. Its local chapters bring likeminded people together and are committed to promoting a sustainable food system. These networks support small-scale agriculture, artisanal fishing and food production that respects ecosystems. They also promote heritage animal breeds and gastronomic cultural traditions.

The global Slow Food movement has a diverse membership. Its delegates include chefs, farmers, fishers and activists. They are working to convince political decision makers to recognize nutrition as a cross-departmental area and to take a holistic approach to food policy. The organization has also called on MEPs to vote against the deregulation of new genetically modified organisms (GMOs).

It is a way of life

Slow Food members share an insatiable love for good, clean, and fair food. They enjoy preserving a local food culture, respecting producers and the environment, and paying farmers and fishermen a living wage for their work. They also believe that pleasure should be democratic, meaning that everybody should have access to the culinary traditions of their communities.

The organization’s first major milestone was the 1996 Salone del Gusto, an international food fair that celebrates small-scale quality production. Its flagship project, the Ark of Taste, aims to protect the world’s most unique foods (including fruit and vegetable varieties, cheeses, and animal breeds) from extinction by listing them in a global catalog for future generations.

At the regional level, Slow Food members organize activities such as joint dinners or walking excursions to discover local culinary delights. These are fun and educational opportunities that help to build community and a sense of place. At the same time, Slow Food encourages people to act on issues that affect the quality of our food and its sustainability.

Barcelona’s 0 km Slow Food Revolution

Barcelona’s 0 km Slow Food Restaurants

Whether you’re an epicurean or just an occasional foodie, you might have heard the term ‘km 0’ bandied about. It’s a growing culinary trend that promotes the use of locally produced ingredients.

The Slow Food movement has a network of local producers and restaurants that are committed to sourcing their produce from the surrounding area. These restaurants, known as km 0 restaurants, are dedicated to promoting their produce and maintaining regional customs.

What is km 0?

The concept of km 0 is closely linked to the Slow Food movement, which was founded as a counterpoint to fast food chains. It is an approach to food that focuses on local ingredients and encourages people to support local farmers. This helps to maintain traditional culinary customs and reduces the environmental impact of food production and transportation.

Ideally, km 0 foods should come from the same place that they are cooked and eaten. However, it is not always possible or practical to produce all of the food a restaurant needs on-site. For this reason, restaurants that use km 0 ingredients must source their products from producers within a certain distance of the restaurant.

In Spain, the Red Km 0 project was created to encourage restaurants to buy more locally sourced products. This initiative is led by chef Valenti Mongay, who is also the leader of the Slow Food Garraf Convivium. The project encourages chefs to build closer relationships with local producers and to purchase Slow Food Presidia and Ark of Taste products. The restaurants that participate in the project must also offer at least six dishes that are completely based on km 0 ingredients.

Why is km 0 important?

It’s a way of ensuring that the food you eat is good, clean and fair. Good, because it’s a high quality product with a flavourful taste; clean, because it’s been produced and transported in an environmentally friendly way; and fair, because the people involved are treated fairly.

Eating km 0 food reduces damage to the environment, cuts emissions of carbon dioxide and encourages the development of regional customs. It also helps to keep rare species like Romanesco broccoli, a striking vegetable that resembles a fractal, from going extinct.

The concept is not limited to restaurants as Slow Food’s local offices organize courses, tastings and dinners where chefs learn how to cook with local produce. In addition, consumers can grow their own vegetables in a garden or on a windowsill to become their own ‘co-producers’ and make a difference. The kilometre zero mark is not only for roads, but also for farmers, providers and restaurants. It is a symbolic place that represents the beginning of a journey, the starting point from which all the other milestones are measured.

What are the benefits of km 0?

In addition to reducing food miles, this movement helps preserve traditional farming methods that are kinder to animals and the environment. Businesses who get involved can also build a reputation as green and sustainable companies.

For example, the menu at restaurant Capicua in Cerdanyola del Vallès identifies not only the ingredients but where they came from, as well as being associated with Slow Food’s Garraf convivium. Chef Isaac Gomez says the restaurant’s kilometer zero philosophy allows it to offer dishes based on local pantry ingredients such as cod fritters stuffed with rosemary honey.

In order to obtain the Slow Food KM 0 certification, restaurants must follow certain guidelines. These include sourcing 40% of the ingredients from within the region, buying directly from producers and using foods that are certified ecological or belong to the Ark of Taste. This is one of the main pillars of the Slow Food philosophy, which has spread to 160 countries worldwide and aims to defend regional traditions and good, clean and fair food.

Where can I find km 0 restaurants?

The 0 km philosophy, also known as Slow Food, has become an international trend and, in Barcelona, there are a growing number of restaurants that offer it. These restaurants follow the guidelines of the Slow Food movement, which requires that at least 40% of the ingredients in each dish are locally sourced (produced within a hundred miles of the restaurant).

In addition to being healthier for diners and supporting local producers, these restaurants reduce the pollution caused by transporting foods long distances. They also promote regional traditions and encourage people to think about the food they eat.

Many well-known chefs like the Roca Brothers, Angel Leon or Yayo Daporta support this way of eating. They organize events and workshops where they encourage the public to eat local, sustainable products. In addition, they offer courses at their restaurants to teach people how to cook with local produce. In this way, they help to democratize good food and make it available for more people.

Celebrating Global Identity with Food Communities

Salone Del Gusto and Terra Madre

The biennial event Terra Madre assembles food communities, the political flagship of the Slow Food movement. Taking its name from Pachamama, the indigenous word for Mother Earth, it has become a theatrical celebration of global identity.

Taking your place in this cosmopolitan womb of immediate contact is like being thrust into a cacophonous swarm of sensory experiences.

Theme: Regeneration

Every two years, thousands of people come to Turin to discuss food politics at Salone del Gusto Terra Madre. This year, the event has a special theme: regeneration. According to Slow Food, in the current condition of environmental, economic, social and health crises, we need a radical renewal that must start with food – turning it into the “reflection of a model of sustainable agriculture” and transforming our daily choices to be good citizens of this planet.

The analysis of the declared interests (with up to two responses) reveals that a significant part of those attending slow food terra madre are looking for models to aspire to face the various climate, social and health crises and prevent future ones. This is a positive result that demonstrates the importance of this network in developing collaborations and exchanges with local projects and communities.

Venue: Parco Dora

The choice of the Parco Dora – a large park beyond the city centre built on the former site of post-industrial dereliction – is particularly symbolic. It is a living example of regeneration, and a symbol of how food and urban space are linked.

The large exhibition spaces devoted to various supply chains and thematic networks (Slow Grains, Slow Beans, and a new network of chestnut growers) are also a point of convergence for many of the projects promoted by Terra Madre delegates. They protect biodiversity, support diversified agriculture and dignified livelihoods, and promote good, clean and fair food for everyone.

The Ark of Taste

The Ark of Taste is an international catalogue of cultural foods that are at risk of being lost. It is a powerful reminder that our food heritage is part of our identity, our history and our culture.

This year, the theme was “Regeneration.” The regenerating landscape includes food, but also the regeneration of soil that has been impoverished by monocultures and chemicals, making it possible for farmers to grow healthy crops, eat delicious food and have dignified livelihoods. Several speakers addressed this theme, including Carmen Martinez from the Slow Food TehuacA!n Amaranth Presidium in Mexico on Water, Dario Fo, Nobel Laureate in Literature and member of the European Parliament on Hunger and Edward Mukiibi from the Thousand Gardens in Africa Project in Uganda on Network.

Feeding the City

At the Feeding the City stage, project participants and urban food policy experts discussed how cities can create connections to guarantee quality, resilience, and sustainability.

Emanuele Amo is a PhD candidate in human geography at Aberystwyth University and a research assistant with Slow Food. His thesis is based on his cooperative research with Slow Food, and focuses on the role of cultural events as vectors for value-sharing.

In the Kitchen visitors can taste preparations from around the world with cooks from the Slow Food Cooks’ Alliance, while a special space for the Slow Food Coffee Coalition offers the chance to try artisanal coffees. The Market hosts thousands of producers who share the Slow Food philosophy of good, clean and fair food as a human right.

Youth & Tourism

The interesting impacts recorded by the SEeD project (Systemic Event Design) on the change in behavior of those who participate in Slow Food’s principal cultural events – in particular on the themes of sustainability and biodiversity – seem to confirm the ability of the Salone del Gusto macro-event to act as a complex social contagion, able to transform attitudes and behaviors in a way that goes beyond an ideological adherence. It seems instead to create relationships with a long-term impact, in which there is a mix of short-term and local networks of reference communities, together with broader and global ones, that reinforce the capacity for collective action of the Slow Food community.

From the Education Garden to a new network of chestnut growers, this year’s Terra Madre will bring together many of the different supply chains and thematic networks that are part of the Slow Food world. Discover more about them here.

Revolutionizing Sports Entertainment: The Evolution of Sports Broadcasting

In today’s digital age, the excitement of live sports events can be captured from anywhere in the world, thanks to 스포츠중계, or sports broadcasting services. Fans no longer need to be present in a stadium to feel the adrenaline rush of a nail-biting match or experience the thrill of their favorite teams battling it out for victory.

Sports broadcasting has revolutionized the way we consume sports entertainment. In the past, missing a game meant waiting for the next day’s newspaper or catching the highlights on TV. Now, with live streaming services, fans have real-time access to games and events, allowing them to watch from the comfort of their homes or even on the go. Whether it’s baseball, soccer, basketball, or any other sport, the reach of sports broadcasting has bridged the gap between the live action and its audience.

Engagement with the audience has taken center stage in sports broadcasting. Engaging commentators add depth to the viewing experience, providing insights, stats, and trivia that enhance the viewers’ understanding and enjoyment of the game. This personal touch keeps fans glued to their screens, creating a sense of camaraderie among viewers spread across different corners of the globe.

The impact of sports broadcasting on fan culture has been significant. It has created communities of fans who share their passion and support for teams or athletes on social media and beyond. Breathtaking moments in sports can now be instantly shared, gif-ed, and memed, creating viral sensations that last long after the game is over.

Another benefit of live sports broadcasting is the access it provides to a wider variety of sports, many of which may never have received much attention in the conventional broadcast model. Niche sports and regional games have found a platform, helping them to grow their audience and allowing fans to explore new athletic territories.

The culmination of a sports broadcast is usually marked by an incisive wrap-up in the concluding segment. The final thoughts and summaries provide closure to the event, critically analyzing the highs and lows, the strategy, and the execution of the teams and athletes involved. It is here that the essence of the entire game is distilled into key takeaways for the audience.

Live sports broadcasting, 스포츠중계, has turned into a global phenomenon that is constantly evolving. As technology advances, so too will the means by which we experience these events. Fans can look forward to more interactive and immersive experiences as broadcasters harness emerging technologies to deliver even more captivating content.

Roasting a dog’s head: A glimpse into ancient Roman cuisine

The Romans Would Slow Roast a Dog’s Head

One of the most foolproof ways to achieve succulent, tender meat is low and slow cooking. This method involves cooking a joint at a lower temperature for longer, and is best suited to cuts such as pork shoulder, brisket, beef chuck or oxtail. The technique is ideal for home ovens because it allows the proteins in the meat to firm up slowly, resulting in tender meat.

1. The Romans

The Romans would roast a dog’s head, and a whole lot more, in their Colosseum spectacles. Those little dachshunds must have felt pretty small in that vast, crowded arena with screaming people and colossal beasts.

Cato in De Agri Cultura advised farmers to select cur-dogs from a litter for their ability to “herd cattle, sheep, or other animals; chase wild birds and squirrels; hunt rabbits, hares, or other game; and exterminate rodents.” In an 18th-century description of turnspit dogs, Bewick wrote that they did not represent a specific breed but rather a mongrel selected for its ability to herd livestock; catch birds for the table; and serve as a watchdog.

Kiki Aranita, whose Poi Dog food truck has been a Philadelphia staple for over a decade, and Melanie Subacus, classics professor at Villanova and Temple universities, first toyed with the idea of a restaurant night dedicated to ancient Roman cuisine in 2008. Their enthusiasm for fusing their classical studies with their culinary passion grew into this project.

Emory Students Promote Sustainable and Healthy Slow Food

Emory Students Promote Slow Food

The Emory community is becoming more and more conscious of sustainability issues. Students have taken matters into their own hands, promoting grassfed milk, Fair Trade coffee and tea, and organic local produce in dining rooms.

It’s not just about reducing waste, though. Slow food also boosts your health and provides a more satisfying meal.

Taking an Interest in Your Food

The Italian phrase, “When in Rome, do as the Romans do,” inspired a unique food movement that was born against another culinary frenzy, “Fast Food.” In its early days, Slow Food adherents were instructed to build their meals solely on the values of defending regional traditions and avoiding imported foods.

Today, those values have broadened to include protecting our edible biodiversity and supporting chefs who are willing to put Slow Food philosophies into practice. The organization’s Ark of Taste program shines a spotlight on rare and unique varieties of fruits, vegetables, meats, artisan cheeses and traditional recipes.

At Emory University and Emory Healthcare, Slow Food on Campus chapters promote good, clean and fair food for students, faculty and the greater community. From dining halls and classrooms to the Oxford College organic farm and hospital cafeterias, sustainable and local food choices nourish Emory’s regional agricultural economy. In addition, students and staff benefit from the university’s commitment to transparency in sustainable and local food purchasing.

Boosting Your Health

Slow Food promotes a healthy diet that is balanced and nutritionally sound. The movement encourages consumers to eat locally-sourced foods, as opposed to industrially-produced products that contain unhealthy additives, preservatives and processed sugars. Eating slow also helps to decrease the demand for out-of-season produce and imported food.

One of the biggest benefits of eating slow is that it can help you to lose weight. Research has shown that if you take the time to enjoy your food, you will eat less and will feel more satisfied after each meal. Plus, if you eat slowly, your metabolism will burn more calories.

Emory students like Sabrina Li (25C) and Marcus Davis are already reaping the health benefits of slow food. Li is a member of the new Slow Food on Campus chapter at Emory, which has taken DCT surplus food and turned it into weekly cooking projects, such as pan-seared eggplant rounds with peppers and quinoa. The chapter also organizes weekend trips to Atlanta farmer’s markets.

Developing a Stronger Community

As a community of people, Slow Food advocates for good, clean and fair food. In addition to promoting local, sustainable agriculture and supporting small businesses, it is also an international network that celebrates the role of food in cultural identity.

Emory students take part in this global movement by participating in their campus chapter. In this way, they connect with their local sustainable food community and learn to understand the impact of their eating habits on our planet.

Sabrina Li (25C) leads Slow Food Emory’s DCT surplus food initiative, which offers students the opportunity to grab meals that would otherwise be thrown away. She said the group works alongside DCT staff to make sure that food safety regulations are followed.

She has also been a Slow Food volunteer for years, becoming a regional delegate and then a national Tuscany representative and international councillor in 2021. She is a passionate activist, especially in regards to indigenous peoples and their rights.

Taking Action

In the end, Slow Food is about more than just eating. It’s about bringing people together to take action for a more responsible and sustainable food system. The organization’s values help encourage people to be conscious of their food choices in a world where the fast-food culture has overtaken the traditional cuisines of many countries.

In addition to working closely with local food producers, Slow Food Emory also hosts events to combat global hunger. For instance, the club partners with Dining Services to hold surplus food initiatives, where students can grab DCT meals that would have otherwise gone to waste.

This way, the club is able to provide a healthy meal for students, while simultaneously supporting small-scale producers and reducing waste. Additionally, the group organizes weekend trips to various Atlanta farmers markets to source fresh produce for the meals it cooks for its weekly events. The resulting dishes are as delicious as they are ethically-sourced.

Food for Regeneration: Slow Food’s Sustainable Approach at Terra Madre Salone del Gusto

Slow Food in Turin

Slow Food believes in the right to good, clean and fair food. It is the philosophy that guides its University of Gastronomic Sciences, founded in Pollenzo and Colorno, Italy in 2004.

Brothers Giancarlo and Ugo Lussiana are from Sangone, north of Turin, and they’re here with several wheels of their rare, raw milk cheese. They’re hoping to attract visitors at the Terra Madre Salone del Gusto.

Terra Madre Salone del Gusto

Regeneration is the theme of this year’s Terra Madre Salone del Gusto, the biennial event that gathers food producers from around the world in Turin. The event aims to design a different future for food, one that is inclusive and sustainable for all. Its tagline, RegenerAction, encourages people to take action to design a more sustainable food system.

The theme is rooted in Slow Food’s conviction that food is a powerful tool to rebalance environmental, social, and economic relationships. It can rethink the way we coexist with ecosystems, transforming them into a “reflection of a model of sustainable agriculture,” generating food that nourishes humans and the planet.

This approach to food is reflected in the event’s physical setting, Parco Dora, a vast park outside of Turin that was once a steelworks. The choice of location was intentional, as it showcases the regeneration of a post-industrial urban space. The event also includes a rethinking of the Big Market, which is now digital and takes place in various locations throughout the city. Slow Food has also partnered with the Turin Botanical Garden to create an education garden where visitors can learn about cultivated soils and participate in treasure hunts. This is a great opportunity for kids and families to connect with nature and learn more about the food they eat.

Every two years, thousands of people descend upon the Italian city of Turin to meet, eat, and network at Salone del Gusto Terra Madre. The event, organized by Slow Food International, is a massive convention dedicated to the idea that food should be good for both people and the planet. While the organization has chapters all over the world, Salone del Gusto is the only place where the entire membership comes together at once.

This year, the event is focused on the theme of regeneration. It is a metaphor for the way in which the world can be transformed through a new set of values, including those related to food. The goal is to design a different future for food, one that takes shape in the daily choices of individuals and the collective efforts of communities.

The international press campaign, which has been running since mid-March, focuses on the key themes of the 2022 edition and includes an online press conference and media kits in English, French, and German. The organizers have also sent invitations to over 10,000 journalists, aiming to reach a global audience and promote the event globally. The organizers have also organized a series of conferences in Germany, the UK, and Belgium. This has allowed them to reach a wide audience and generate interest in the event.

Connecting the Community Through Food: Slow Food Lake Tahoe promotes access to healthy and sustainable food through various initiatives.

Slow Food Lake Tahoe

Slow Food is a movement that values preserving cultural and culinary traditions. It also advocates environmental sustainability and social justice.

Four long-standing local social services organizations united to form Sierra Community House in 2019. The new organization focuses on hunger relief, crisis intervention and prevention, family support and community engagement.

Educating the Community

Slow Food Lake Tahoe connects people to the enjoyment of good, clean, fair food by inspiring a self-reliant food culture. The organization hosts local farmer’s markets, a community and food bank garden, and more to promote health and wellness.

One of their most important missions is to ensure that organic food is accessible to everyone, despite high costs in the region. To accomplish this, the organization works with various organizations such as Project MANA and Sierra Community House to provide food assistance for low-income individuals.

Another way in which Slow Food helps the community is by providing compost collection in Truckee. They work with Keep Truckee Green to collect food waste, which is then used to help the community grow food for those in need. In addition, SFLT also hosts the Salmon Buying Club, which gives locals the opportunity to buy sustainably caught Alaskan salmon at a discounted rate. The non-profit reinvests the proceeds into their programs.

Farmer’s Markets

A shopper strolls past a table of organic produce at the local Food Hub. The organization is working to build a local, sustainable and equitable food system that provides families with access to healthy foods year-round.

The organization is promoting local farmer’s markets as well as community support agriculture programs. They’re also hosting dinners and fundraisers to raise money for the Truckee Tahoe Nutrition Coalition, which promotes optimum health through good nutrition and physical activity.

Tucked inside a warehouse at the Truckee airport is the Food Hub’s Farm Shop boutique market. Ordering online is simple; each week customers receive an email with everything the Food Hub has available fresh that week — in-season fruits and vegetables, meats, cheese, breads, dry pantry items and specialty products like sauces and coffee. The Food Hub only works with diversified family farms and purveyors that have applied, been vetted and approved for using sustainable sourcing practices and regenerative agriculture.

Community Garden

The goal of Slow Food Lake Tahoe is to connect the community to the enjoyment of good, clean and fair food by inspiring a self-reliant food culture. SFLT manages the Food Bank Garden in Truckee River Regional Park, hosts a Salmon Buying Club and sponsors the Truckee Saturday Farmers Market, among other programs.

According to a study published in BMC Public Health, community gardens have profound effects on diet, health and psychosocial well-being. Moreover, they also boost neighborhood property values.

In the summer, TownsendMerino grows a wide variety of greens in the Food Bank Garden, including lettuces, kale and spinach, as well as hearty root veggies and squashes. Herbs like oregano, thyme and tarragon also grow there. The harvest is donated to Sierra Community House, formerly known as Project MANA, which provides meals for seniors and people with chronic illnesses in the community.

Food Bank Garden

The Slow Food concept envisions a food system that is based on high quality and taste, environmental sustainability, and social justice. It seeks to move our culture away from destructive industrial agriculture and fast lifestyles toward regenerative regional food traditions, the pleasure of the table, and a more harmonious rhythm of life.

Trish Geary and the SFLT board of directors recently took over the community garden at Truckee River Regional Park, managing the space as the Food Bank Garden with the goal of growing healthy food for families in need in our athletic mountain town. SFLT also offers educational workshops and classes focused on high-elevation edible gardening.

Susie Sutphin is one busy woman. When I catch up with her, she’s juggling a phone while running around the Tahoe Food Hub storefront on Alpine Meadows Road packing orders and organizing the latest arrivals of locally produced food.
